I ran across this article with 3 healthy eating recipe ideas taking a stab at April Fool’s Day. The recipes caught my eye especially because I’m on a weight management program centering around portion control food choices to further healthy living decision for a longer life.

1 tablespoon extra-virgin Olive oil
1 medium Onion, diced
1/4 teaspoon Salt
2 cups instant brown Rice
4 cloves Garlic, chopped
2 1/2 cups vegetable or reduced-sodium chicken Broth
1 pound Asparagus, trimmed and cut into quarter-inch pieces
1 red bell Pepper, finely diced
1 cup frozen Peas, thawed
4 ounces reduced-fat Cream Cheese (Neufchatel)
1/2 cup grated Asiago or Parmesan cheese, plus more for passing, if desired
1/4 cup minced Chives or scallion greens

SMOKED SALMON WITH CHERRY TOMATOES

30 cherry Tomatoes
3 ounces smoked Salmon, finely chopped
1/3 cup finely chopped Onion
1/3 cup finely chopped green Pepper
Salt and pepper to taste
3 ounces Cream Cheese, softened
1 teaspoon Milk
Fresh Dill sprigs

RHUBARB FOOL

1 Cinnamon stick
3 whole Cloves
1 2-inch-long strip Lemon zest
2 1/4 pounds Rhubarb, trimmed and cut into 1/2 inch pieces (8 cups)
1 1/4 cups Sugar
2 cups fat-free vanilla Yogurt
1/2 cup whipping Cream
